Low calorie Yogurt Strawberry muffins

2013-07-09 11.01.15.jpg

This is a low calorie basic muffin recipe, that can be substituted with different ingredients to change the flavors.  This makes 12 muffins, and has 70 calories as written below.

Ingredients:
1 cup crushed fiberone cereal
3/4 cup flour
2 egg whites,or 6 TBSP egg whites in a carton
12 oz Strawberry non-fat yogurt(100 calories a cup)
1/3 cup Splenda
1/4 cup unsweetened applesauce
1 1/4 tsp baking soda
1/2 tsp salt
1/4 cup low calorie strawberry jam,

Preheat oven to 400 degrees and place 12 baking cups in a muffin pan.

Mix together egg whites, applesauce, and yogurt.  Stir in cereal and remaining ingredients, just until moistened.  If you want to add fresh, frozen, or dried berries, add them right before portioning out to muffin cups.  Divide batter among 12 cups, or you can make mini muffins(reduce cooking time).

Bake 23-25 minutes until toothpick comes out clean and golden brown.

**Jam is an optional ingredient, but we love adding jam, if we are making a compatible muffin.  I have also used vanilla non-fat yogurt, when making apple muffins.  I have added flax seed to replace some of the flour.  I have made batches with both wheat and white flour. I have made blueberry muffins, with blueberry yogurt and dried blueberries. These are very filling and not too sweet.

Bread Machine English Muffins

Ingredients:
1 cup milk
1 egg
3 tablespoons butter
1/2 teaspoons salt
2 teaspoons sugar
3 1/4 cups bread flour
2 teaspoons yeast
*cornmeal(not used in breadmaker)

Directions:

Place all above ingredients(except cornstarch) in bread maker as listed. Use dough cycle. Check after about 15 minutes to see if you need to add additional flour if sticky. Add tablespoon at a time if needed.

Once complete, spread cornmeal out on counter and pat out dough until 1/2 inch thick.

If you do not have english muffin cutter, you can use a cleaned out tuna can or biscuit cutter to cut out 14 or so english muffins.

Place on cornmeal coated Parchment paper. Sprinkle cornmeal on tops and cover for 20-30 minutes.

Heat a griddle or oven to 350 degrees. Sprinkle cornmeal on heated griddle or baking sheet and place english muffins on pans. If they have risen too high, you can smoosh them down some with spatula. Cook for 7 minutes on each side. Allow to cool and when ready to eat split with a fork not a knife, to get the famous nooks and crannies. These may be frozen.

Nana's Banana Bread

What do I do when I have some bananas that have gotten overripe, or if my family allows them to go overripe in hopes that I will make their favorite banana bread, go to the store and see if I can find more overripe bananas.  Love this recipe, that my mother-in-law gave me several years ago.  The ingredients below will make 1 loaf, but I normally make multiple loaves, since I have the ingredients out and the loaves freeze really well.  I have frozen these for as much as 6 months and they taste like the day I made them, once thawed.

Ingredients:
4 mashed bananas
1/3 cup melted butter
1 Egg
1 cup sugar
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/2 cups all purpose flour

Directions:
Add Ingredients in order in a mixing bowl , mixing after each ingredient.  After mixing, put in a greased loaf pan and bake for 1 hour at 350 degrees.

Bread Machine Bagels

 Ingredients:
1 1/2 cups water
2 tablespoons and 1 teaspoon sugar
2 1/4 teaspoons salt
4 1/2 cups Bread Flour
3 teaspoons active yeast

I have used this recipe in several bread maker models with success.  This recipe will make about 12 bagels.  Place ingredients as listed in your bread maker and use dough cycle.

After cycle ends, I normally let dough continue to rise for another 15 minutes.
Place dough on lightly floured surface.  Pinch off 12 equal pieces of dough and roll them into balls, before poking a hole in the middle of circle.

I place them on wax paper or they can stay on a lightly floured surface.  Cover and let rise 10 minutes.

In the meantime, preheat oven to 425. Also, place big pot on stove to boil filled with water and 2 Tablespoons sugar(not from about dough recipe, this is additional sugar for this step).

Place several bagels at a time into the boiling water. Boil bagels for 3 minutes, turning bagels, halfway thru.

After 3 minutes, place bagels on a towel to dry.  Leave them to dry for about a minute, before moving to a cookie sheet sprinkled with corn meal.

Beat one egg and brush this egg wash on all bagels, before adding toppings.

Sprinkle any toppings you want on top of bagels.  I make everything bagels( poppy seed, sesame seed, garlic salt, and minced onions), sesame seed, onion, poppy seed, or any other toppings you want to use. You may also leave them plain after egg wash, if you do not want to add any toppings.

Bake them at 425 for until golden brown on the bottom, about 25 minutes.

I store these in paper bags on the counter for several days. You can also place them in a plastic bag in the freezer and pull out and toast as needed.
