Ingredients:
1 1/2 cups water
2 tablespoons and 1 teaspoon sugar
2 1/4 teaspoons salt
4 1/2 cups Bread Flour
3 teaspoons active yeast
I have used this recipe in several bread maker models with success. This recipe will make about 12 bagels. Place ingredients as listed in your bread maker and use dough cycle.
After cycle ends, I normally let dough continue to rise for another 15 minutes.
I place them on wax paper or they can stay on a lightly floured surface. Cover and let rise 10 minutes.
In the meantime, preheat oven to 425. Also, place big pot on stove to boil filled with water and 2 Tablespoons sugar(not from about dough recipe, this is additional sugar for this step).
Place several bagels at a time into the boiling water. Boil bagels for 3 minutes, turning bagels, halfway thru.
After 3 minutes, place bagels on a towel to dry. Leave them to dry for about a minute, before moving to a cookie sheet sprinkled with corn meal.
Beat one egg and brush this egg wash on all bagels, before adding toppings.
Sprinkle any toppings you want on top of bagels. I make everything bagels( poppy seed, sesame seed, garlic salt, and minced onions), sesame seed, onion, poppy seed, or any other toppings you want to use. You may also leave them plain after egg wash, if you do not want to add any toppings.
Bake them at 425 for until golden brown on the bottom, about 25 minutes.
I store these in paper bags on the counter for several days. You can also place them in a plastic bag in the freezer and pull out and toast as needed.
