Honey Pork and Peppers

Ingredients:
1 pound boneless pork, cut into cubes(I cut my cubes from a boneless pork loin)
2 tablespoons canola oil
1 envelope(.87ounce) pork gravy mix(may use beef)
1 cup water
1/4 cup honey
3 tablespoons soy sauce
1/2 teaspoon ground ginger
1/8 teaspoon garlic powder
1 medium onion chopped into 1 inch pieces
1 medium sweet red pepper, cut into 1 inch pieces
1 medium green pepper, cut into 1 inch pieces
Hot cooked rice

Directions:

In a large skillet over medium heat, cook pork in oil until browned, about 15 minutes.

In a small bowl, combine gravy mix, water, honey, soy sauce, ginger, and garlic powder.

Once mixed, add to pork.

Cover and simmer for 20 minutes, stirring occasionally.

Cut the onions and peppers into roughly the same size or a little smaller than the pork pieces.

Add onions and peppers; cook another 5 or 10 minutes longer.
Serve over rice.  Makes 4-6 servings.
